Hey, it seems to me like some of these - oratory, sing, dance, etc. - can be used untrained, and thus would not fit as a specialized skill, yes? Even piano can be faked by an amateur. What's the solution?

Yes, but such a call can be made by a GM. Whether or not you can fake it depends on the situation, and is too mushy.
